Why do you think it is important to compost at Mugs?
I think that in the hierarchy of waste looks like this: reuse, compost, single stream recycle, commingle recycle, then trash. With this being said we already do all the others, compost is as important as reuse and yet we never had the option as a business because the PLA cups are not favorable for smaller compost situations. Composting turns the trash that usually would sit in a landfill to usable product.
Why did you decide to use Clean Air Compost?
Mugs has used biodegradable supplies for over 3 years now and have not had an opportunity to compost them. I almost felt as though I was deceiving the public even though I had no other option. Clean Air Compost has developed a pickup service for our compostable waste when most people would not take the PLA cups. We have reduced our waste from over 8 bags of trash a day to just one single bag.
What are the main things that your restaurant composts on a daily basis?
Food scraps, our biodegradable forks, knifes, and spoons, PLA cups, stir sticks, napkins

Community is important to Mugs because without community it is a very lonely world. Our dynamic spectrum of customers keeps it interesting and displays the beautiful diversity that comprising our community. We choose to be progressive and set the bar for what should be expected of businesses because we feel adds value to our community. Through education Mugs intends to wake up the conscious consumer and open their eyes to the reality that their dollar spent is their vote. Who they choose to support as a business affirms who that business chooses to support. Community through coffee indicates that through a common medium, we can all embrace our community and it's wonderful diversity while we grow through education to constantly be better then the day before.
